Recipe of Tunisian Fricassée Sandwiches
Ingredients:
For the Dough (Mini Buns):

3 cups flour

1 tbsp sugar

1 tsp salt

1 tbsp instant yeast

¾ to 1 cup warm water

2 tbsp oil

Oil for frying
For the Filling:

1 can tuna in oil (drained)

2 medium potatoes, boiled and diced

2 hard-boiled eggs, sliced
-
½ jar Aïcha Kosher Black Olives, pitted and sliced

Harissa (to taste)

Pickled lemons, cucumbers or carrot sticks (optional)

Salt, pepper, olive oil
Instructions:
1. Prepare the Dough: In a large bowl, mix flour, sugar, yeast, and salt. Add warm water gradually and knead until smooth. Add oil and knead again until the dough is elastic. Cover and let rise for 1 hour or until doubled.
2. Shape and Fry the Buns: Divide dough into golf-ball-sized portions. Flatten slightly and let rest 10 minutes. Heat oil in a deep pan and fry buns until golden brown on both sides. Drain on paper towels.
3. Prepare the Filling: In a bowl, gently mix tuna, a drizzle of olive oil, salt, and pepper. Set aside all other ingredients (boiled potatoes, sliced eggs, olives, harissa, pickles).
4. Assemble the Fricassées: Slice each bun open (like a pita pocket). Spread a bit of harissa inside. Stuff with tuna, potatoes, egg slices, Aïcha black olives, and pickles.
5. Serve: Enjoy warm or at room temperature — great for Seudah Shlishit, picnics, or holiday gatherings.
