Recipe for Mediterranean Fattoush Salad with Crushed Kakis (Parve)

Ingredients (Serves 2–3):

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 red onion, thinly sliced

  • 1/2 red bell pepper, chopped

  • 1 tbsp chopped fresh mint

  • 2 tbsp chopped parsley

  • Juice of 1 lemon

  • 3 tbsp olive oil

  • Salt and pepper to taste

  • 5–6 Fennel Kakis, roughly crushed by hand

  • Optional: sumac for extra zing

Instructions:

  1. In a bowl, combine all chopped vegetables and herbs.

  2. Add lemon juice, olive oil, salt, pepper, and sumac if using. Mix well.

  3. Just before serving, add the crushed fennel kakis for crunch and flavor.

  4. Serve immediately as a starter or side dish.

The fennel adds an anise touch that elevates this simple Middle Eastern salad.
