Recipe for Rustic Mustard Potato Salad (Parve)
Ingredients (Serves 4–6):

1.5 lbs (700g) baby potatoes, halved

2 tbsp Liel Old Grain Mustard

3 tbsp olive oil

1 tbsp red wine vinegar

1 shallot, finely diced

2 tbsp chopped fresh parsley

Salt and pepper to taste
Instructions:

Boil potatoes in salted water until fork-tender (about 15–20 minutes), then drain and let cool slightly.

In a bowl, whisk together old grain mustard, olive oil, vinegar, shallot, salt, and pepper.

Toss the warm potatoes with the dressing and parsley.

Let sit 10 minutes before serving to absorb the flavors.
