Recipe of Tunisian Nikitouche Soup with Chickpeas and Harissa
Ingredients:

1 cup Kosher Nikitouche from Shimon Ariche

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional)

1 tablespoon tomato paste

4 cups vegetable broth

1 can (15 oz) chickpeas, drained and rinsed

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Instructions:

In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.

Add minced garlic, ground cumin, paprika, and cayenne pepper (if using). Cook for 1–2 minutes until fragrant.

Stir in tomato paste and cook for another 2 minutes.
