Recipe of Tunisian Nikitouche Soup with Chickpeas and Harissa

Ingredients:

  • 1 cup Kosher Nikitouche from Shimon Ariche

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1/2 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (optional)

  • 1 tablespoon tomato paste

  • 4 cups vegetable broth

  • 1 can (15 oz) chickpeas, drained and rinsed

  • Salt and pepper to taste

  • Fresh cilantro or parsley for garnish

  • Lemon wedges for serving

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.

  2. Add minced garlic, ground cumin, paprika, and cayenne pepper (if using). Cook for 1–2 minutes until fragrant.

  3. Stir in tomato paste and cook for another 2 minutes.

  4. Pour in vegetable broth and bring to a boil.

  5. Add chickpeas and Kosher Nikitouche. Reduce heat and simmer for 15–20 minutes, or until pasta is tender.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with fresh cilantro or parsley and lemon wedges on the side.
