Recipe for Traditional Tunisian Hlalem Soup

Ingredients:

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 4 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (optional)

  • Salt and black pepper to taste

  • 2 tablespoons tomato paste

  • 1 pound (450g) beef or lamb, cut into cubes

  • 1 cup green lentils, rinsed

  • 6 cups water or vegetable broth

  • 1 cup chopped spinach or Swiss chard

  • 1/2 cup Kosher Ahlalem (Tunisian Pasta)

  • Juice of 1 lemon

  • Fresh parsley, chopped, for garnish

 

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.

  2. Add minced garlic, ground cumin, paprika, cayenne pepper (if using), salt, and black pepper. Stir for 1–2 minutes until fragrant.

  3. Stir in tomato paste and cook for another 2 minutes. Add the meat cubes and cook until browned on all sides.

  4. Pour in water or vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, or until the meat is tender.

  5. Add rinsed lentils to the pot. Continue to simmer for another 30 minutes, or until lentils are soft.

  6. Add chopped spinach or Swiss chard and Kosher Hlalem. Cook for an additional 10 minutes, or until the pasta is al dente.

  7. Stir in lemon juice. Adjust seasoning with salt and pepper as needed.

  8. Ladle the soup into bowls, garnish with chopped parsley, and serve hot.
