Recipe of Tunisian Chicken Nikitouche Stew

Ingredients:

  • 1 cup Kosher Nikitouche from Casatova

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 pound (450g) bone-in chicken pieces (legs, thighs, or a mix)

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon turmeric

  • 1/4 teaspoon cayenne pepper (optional)

  • 2 tablespoons tomato paste

  • 4 cups chicken broth or water

  • 1 cup diced carrots

  • 1 cup diced zucchini

  • Salt and pepper to taste

  • Fresh parsley for garnish

 

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.

  2. Add minced garlic and cook for 1 minute until fragrant.

  3. Add chicken pieces and brown on all sides, about 5-7 minutes.

  4. Stir in ground cumin, paprika, turmeric, cayenne pepper (if using), and tomato paste. Cook for 2 minutes to combine flavors.

  5. Pour in chicken broth or water, bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.

  6. Add diced carrots and zucchini to the pot. Continue to simmer for another 15 minutes until vegetables are tender.

  7. Add Kosher Nikitouche to the stew and cook for an additional 10-12 minutes, or until the pasta is tender.

  8. Season with salt and pepper to taste.

  9. Serve hot, garnished with fresh parsley.

This hearty stew is a comforting dish, perfect for shabbat, family dinners or special occasions.
